I hate being hungry  and on an evening I am more likely to want to pick at stuff that is bad for me after my tea if I’m not sufficiently full enough! If you find yourself in the same boat ‍♂️ then try this dish! You’ll be stuffed afterwards but also feel quite smug as you’ve almost hit your recommended 5 portions of fruit n veg in ONE DISH  and you’ve filled your body full of loads of health boosting vitamins!! ⠀

You will need:⠀
500g turkey mince. (this is lower in fat that beef)⠀
1 tin chopped tomatoes.⠀
1 red onion.⠀
1 red pepper.⠀
1 tin sweet corn.⠀
1 tin kidney beans.⠀
1 beef stock cube in 200ml water.⠀
2tbsp tomato puree.⠀
2 cloves garlic.⠀
1 tsp cumin.⠀
2tsp chilli powder.⠀
1 tsp paprika.⠀
1 tbsp. mixed herbs.⠀
Salt & pepper to taste.⠀
Broccoli or rice to serve with.⠀

Method:⠀
1️⃣Cook onion and pepper in a little bit of oil (I use rapeseed) until starting to soften.⠀
2️⃣Chuck in all herbs and spices and cook for further minute.⠀
3️⃣Add mince and cook for 5 mins.⠀
4️⃣Add chopped tomatoes, tomatoe puree, beef stock and cook for 20 mins.⠀
5️⃣Add kidney beans & sweetcorn and cook for further 10 mins.⠀
6️⃣Serve with broccoli or rice!⠀
